“Meat” loaf

I was in a hurry to get dinner on the table tonight after getting home a little late.  It was all gloomy and chilly outside so I was craving some comfort food.  A Field Roast classic meatloaf fit the bill.  I had some cremini mushrooms so I whipped up some mushroom gravy from VCON to go with it; a little salad on the side and I was stuffed.  One thing I love about cooking and baking is using my vintage kitchen utensils, it makes me feel so connected to all those strong women of the past who made a career out of making a beautiful and comfortable home for their families.  I’m a little beyond the homemaker stage, but I still like cutting my Earth Balance into some flour with my 50 year-old pastry blender, it really is the small things!
