If It’s Too Hot in the Kitchen…

It was 85 degrees today and there was no way I was going to heat up my kitchen making the pizza that I had planned.  Instead I went for a cool and tangy bowl of avocado and tomato, I added a blob of hummus for some protein and dressed it all up with fresh squeezed lime and EVOO (I’m channeling Rachel Ray).  I’m telling you that was the most filling and delicious thing I’ve eaten since…well yesterday or this morning I guess.  I made the hummus using the recipe in VCON, it was garlicky and smooth…I actually shut down my vitamin in the process, it took an hour to cool down and function again.  The avocado was a Haas from a friends tree and the tomatoes were sugar plums from Trader Joe’s.  What a yummy non-heat producing meal.   The avocado was creamy, the tomatoes tangy, the hummus complemented the whole thing and the lime juice added just the right amount of zing.  Oh yeah, and I had a perfectly chilled Rising Moon Spring Ale to top it off.
