3rd Installment of Chicago Diner

Cooking my way through the Chicago Diner Cookbook the fourth recipe I tried was the Black Bean and Grain Burgers.  They were fairly quick to put together once the beans and rice were cooked.  It made 8 large patties so I have some in the freezer for another day and they were quite tasty.  I served them with a little melted Daiya and tomatillo salsa which complimented the cumin in the burgers nicely.  I meant to throw some cilantro on it but I forgot.  Served up with sweet potato fries and steamed cauliflower and it was a meal to satisfy.  N. ate two burgers and seconds of everything.  He always watches me suspiciously when I’m serving myself.  He wants to make sure I don’t take more than my share which is usually about half of what he gets.
