And Then There’s the Leftovers

The great thing about grilled veggie leftovers is that they can be transformed into a delicious wrap for lunch the next day.  Which is exactly what mine from last night morphed into this morning.  Even though I was running a little late I manged to put together this fantastic lunch and pictures do speak louder than words…

It starts with a whole grain wrap

then a schmear of hummus

Next a handful of peppery arugula

then those lovely leftover veggies

I threw on some kalamata olives, a drizzle of olive oil, and a splash of balsamic.  Roll it up and what you get looks like this…

A side of blue

and peach

and you are good for the afternoon!
