Another evening where cooking just wasn’t going to happen in my kitchen…but going hungry really wasn’t an option either. Fall back on the easy one pan, veggie loaded, stir fry meal. This one was made with zucchini (really), tomatoes, white onion, some soy chorizo from TJ’s, a little crumbled tofu for filler, and seasoned with green salsa from Whole Foods. It simmered on the stove while I cleaned up and fed the cats, then I enjoyed it outdoors per summertime dining usual. everything tastes better served in one of my vegan bowls and of course there was a sparkling Ooba on the side.
