Soft Serve

Here’s what I love about my Vita Mix…you simply take a handful of random fruits and veggies, toss in some ice, then whip it into a frenzy of delicious, nutritious soft serve for breakfast.  It was even a beautiful color to start the day!  This was a mix of one cup of OJ, a handful of frozen mango, a half a frozen banana, a half a carrot, 2 ounces of silken tofu (for a protein boost) and about half a cup of crushed ice.  A minute in the Vita Mix and I turned out this bowl of loveliness that kept me peppy until noon.
