Vegan MoFo – Gingerbread Waffles

So what do you do when it starts raining at 3:45 am and you can’t sleep and you have a new waffle iron just sitting cold and lonely in your cupboard?  Do you listen to that irritating voice in your head that keeps saying things like..

We’re making waffles

I listened and at 4:00am I found myself in the kitchen mixing up a batch of gingerbread waffles from Vegan Brunch.  I didn’t have any fresh ginger so I subbed in a teaspoon of dried.  My house smelled like Christmas…Too soon, you think?  Whatevs, if only I could have crawled back into bed after that, but no, work called.

Got to use my new waffle iron and my cool dispenser that had yet to be tried out.  Worked like a charm.  Plus I have 4 waffles in the freezer all ready for the next morning it starts raining at 3:45am and I crave waffles.

The A List

This has to be an A list because I don’t have a B list yet.  I’m talking about a grocery list about a mile long that I’m going to have to do some serious paring down of.  I haven’t been cooking much as you know so this week I promised myself that N and I would be eating high on the hog so to speak.  I think I need a different phrase one that doesn’t refer to pigs and pork, you know?  I piled up my cookbooks this afternoon (some of them anyway) and got to planning.  I’m thinking about phasing out the smoothie in a bowl as the weather cools down and moving into more warming breakfasts.  Steel cut oats in the crock pot, waffles, scrambles with sausage served on a whole grain muffin or bagel.  Lunches will consist of leftovers if available and soup or sandwich if not, plus some fruit or raw veggies on the side.  Dinner, I’m looking at all things warm and comforting, casseroles, soups, things baked instead of chilled.  So it’s on to menu planning instead of heading out to the grocery store on an empty stomach with a mile long list!

I have been in a cooking and eating funk lately.  Could be the result of too much travel or work but I resolved to get out of it and get back into some healthy habits – – FYI Mint Newman-O’s and Cookie Dough ice cream are not really a healthy dinner.  I stopped at Vitamin City to pick up some Coconut Butter on the way home from a marathon meeting in Monrovia.  I walked out with some Date & Tamarind cooking sauce, a can of Amy’s Black Bean Chili, 3 little yams (so cute those little veggies!), along with the jar of Coconut Butter.  I had forgotten that today was my CSA delivery day, I had put it on hold for a couple of deliveries due to my schedule, so I came home to a surprise box with a beautiful eggplant, a giant heirloom tomato, a couple of onions, a bag of HOT peppers, an avocado, plums, and a couple of grapefruit.  What a bounty.  If I can’t throw a meal together from that I need some help.  I’m thinking along the lines of some eggplant  and yam simmered in the Tamarind sauce, maybe I’ll toss in the last half of my giant zuke from the garden.  I wonder if one of those hot peppers would be too much, the jar of sauce says “hot and sweet”.  Too much ya think?  Maybe just served up over some basmati rice with a sliced tomato on the side…oh yah, the possibilities!

Dinner tonight…sometimes you just gotta do it!
